Chicken and Dumplings
Ingredients
Dumplings
- 2 cups flour
- 1 Tbsp baking powder
- 1 tsp baking soda
- 3/4 cup buttermilk ( I mix 1 Tbsp lemon juice or vinegar with a cup of milk for this. Mix and let sit for 5 minutes)
- 6 Tbsp melted butter
- 2 Tbsp parsley
Chicken
- Some cooked chicken: Rotisserie, boiled and shredded or however you like. A pound or so should do. You probably already know how much your family eats at a meal.
- Chopped onion
- Chopped celery
- 2 - 3 cloves minced garlic
- 2 - 4 Bay leaves
- 2 tsp thyme
- 1/2 Cup flour
- Chicken stock
No real quantities here - just an ingredient guideline
Instructions
Dumplings
Mix together the dry ingredients and then add the liquid. Form into a dough ball. I don't know if this next part is necessary, but I then cover the bowl with a kitchen towel while i prep the chicken. When you are ready, make dough balls about inch round and drop in to the chicken.
Chicken
In a dutch oven, saute the onion, celery, and minced garlic for about 5 or so minutes. Add the chicken stock, but reserve about 1/2 cup. Add the thyme and bay leaves. Add the chicken and allow to simmer on medium for about 20 minutes. In a separate container mix the reserved chicken stock and flour into a slurry. Add to the chicken. Finally, drop the dumpling dough balls into the pot and cover. Allow to cook about 10 minutes. The dumplings will float when they are done.
