Scottish Shortbread Cookies

Scottish Shortbread Cookies

Ingredients
  • 2 Cups butter
  • 1 Cup packed brown sugar
  • 4 1/2 Cups flour
Instructions
  1. Cream butter and brown sugar
  2. Add 3 to 3 3/4 cups flour. Mix well.
  3. Sprinkle board with remaining flour. Knead for 5 minutes adding enough flour to make the dough soft.
  4. Roll to 1/2 inch thickness.  Cut into cookies - cookie cutter or cut into strips.
  5. Prick the cookies with a fork
  6. Bake at 325 degrees F for 20 - 25 minutes
