Honey Glazed Pork Tenderloin

Ingredients
  • 1/3 Cup honey
  • 2 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • 2 Tbsp sesame oil
  • 2 Tbsp balsamic vinegar
  • 2 (3/4 pound) pork tenderloins

Instructions
  1. Preheat oven to 450 degrees F
  2. In a bowl, mix the honey, soy sauce, sesame oil and balsamic vinegar
  3. Place pork tenderloins in a roasting pan and roast 15 minutes in the preheated oven
  4. Remove pork from oven and baste with sauce.  Reduce oven temperature to 350 degrees F and continue roasting for about 45 minutes basting occasionally with the honey sauce to an internal temperature of 145 degrees

Ingredients

Put it all in a blender
  • 1/2 Cup minced onion
  • 1/2 Cup peanut oil
  • 1/3 cup rice vinegar
  • 2 Tbsp water
  • 2 Tbsp minced ginger
  • 2 Tbsp minced celery
  • 2 Tbsp ketchup
  • 4 Tsp soy sauce
  • 2 Tsp sugar
  • 2 Tsp lemon juice
  • 1/2 Tsp minced garlic
  • 1/2 Tsp salt
  • 1/4 Tsp pepper
Blend

Bleu Cheese Dressing

Bleu Cheese Dressing

Ingredients
  • 3/4 Cup sour cream
  • 1 1/3 Cup mayonnaise
  • 1 Tsp Worcestershire
  • 1/2 Tsp dry mustard
  • 1/2 Tsp garlic powder
  • 1/2 Tsp salt
  • 1/2 Tsp pepper
  • 4 oz bleu cheese
Mix it up.  It's better if it can sit 24 hours before serving

Italian Dressing Mix

Ingredients
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp sugar
  • 2 Tbsp oregano
  • 1 Tsp pepper
  • 1/4 Tsp thyme
  • 1 Tsp basil
  • t Tbsp parsley
  • 1/4 Tsp celery seed powder
  • 2 Tbsp salt
Mix it all up.  I usually make about a 6x batch and store the mix in an airtight jar

Instructions

The ratio is as follows:

1/4 Cup vinegar
2/3 Cup olive oil
2 Tbsp water
2 Tbsp mix

Shake it up!

Crab Pie

Crab Pie

Ingredients

2- 9″ deep pie crusts (baked 3 minutes and cooled)
1 lb. crab meat
4 eggs
2 Tbsp. flour
1 cup mayonnaise
1 cup whole milk
8 oz. shredded Swiss cheese
8 oz. shredded Cheddar cheese
2 tsp. Old Bay seasoning
1- Tbsp. finely chopped onion
1- Tbsp. finely chopped green pepper

Instructions

Pre-heat oven to 350º – par bake your crust for 3 minutes. We used Pillsbury pie dough and it worked out great. We did spray the pie pans with Pam spray to keep the crust from sticking.

Combine eggs, flour, mayonnaise and milk, mix well. Add remainder of the ingredients (except crab meat) and mix well.

Fold in crab meat and try not to separate the lumps of crab meat too much. Pour into 2 separate pie crusts, sprinkle with additional Old Bay Seasoning.

Bake at 350º for 50 minutes or until knife comes out clean. (Check at about 40 minutes to avoid burning, since ovens vary)

Scottish Shortbread Cookies

Ingredients
  • 2 Cups butter
  • 1 Cup packed brown sugar
  • 4 1/2 Cups flour
Instructions
  1. Cream butter and brown sugar
  2. Add 3 to 3 3/4 cups flour. Mix well.
  3. Sprinkle board with remaining flour. Knead for 5 minutes adding enough flour to make the dough soft.
  4. Roll to 1/2 inch thickness.  Cut into cookies - cookie cutter or cut into strips.
  5. Prick the cookies with a fork
  6. Bake at 325 degrees F for 20 - 25 minutes

Peanut Butter Cookies

Peanut Butter Cookies

This recipe is a variation on the source that will produce a sandy cookie great for dunking in milk!

Ingredients
  • 1 cup unsalted butter
  • 1 cup crunchy peanut butter
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoons baking soda

Directions

Cream butter, peanut butter, and sugars together in a bowl; beat in eggs.
In a separate bowl, sift flour, baking powder, baking soda, and salt; stir into butter mixture. Put dough in refrigerator for 1 hour.
Roll dough into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a crisscross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown.

Banana Bread


Banana Bread

Ingredients


1 cup granulated sugar
8 tablespoons (1 stick) unsalted butter, room temperature
2 large eggs
3 ripe bananas
1 tablespoon milk
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt


Directions

  1. Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan. 
  2. Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition. 
  3. In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. In another bowl, mix together the flour, baking powder, baking soda and salt. 
  4. Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears. 
  5. Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.

Russian Dressing

Ingredients
  • 1 Tbsp finely chopped onions (I like to use a micro-plane grater for this)
  • 1 Cup mayonnaise
  • 1/4 Cup ketchup
  • 1 Tsp Worcestershire
  • 4 Tsp  horseradish
  • 1/4 Tsp paprika
  • 1 Tsp hot sauce
  • Salt to taste
Mash the onion into a paste if you don't use the micro-plane and mix it all up!

Chicken and Dumplings

Ingredients

Dumplings
  • 2 cups flour
  • 1 Tbsp baking powder
  • 1 tsp baking soda
  • 3/4 cup buttermilk ( I mix 1 Tbsp lemon juice or vinegar with a cup of milk for this.  Mix and let sit for 5 minutes)
  • 6 Tbsp melted butter
  • 2 Tbsp parsley
Chicken
  • Some cooked chicken: Rotisserie, boiled and shredded or however you like.  A pound or so should do. You probably already know how much your family eats at a meal.
  • Chopped onion
  • Chopped celery
  • 2 - 3 cloves minced garlic
  • 2 - 4 Bay leaves
  • 2 tsp thyme
  • 1/2 Cup flour
  • Chicken stock
No real quantities here - just an ingredient guideline

Instructions

Dumplings

Mix together the dry ingredients and then add the liquid.  Form into a dough ball.  I don't know if this next part is necessary, but I then cover the bowl with a kitchen towel while i prep the chicken.  When you are ready, make dough balls about inch round and drop in to the chicken.

Chicken

In a dutch oven, saute the onion, celery, and minced garlic for about 5 or so minutes. Add the chicken stock, but reserve about 1/2 cup. Add the thyme and bay leaves.  Add the chicken and allow to simmer on medium for about 20 minutes.  In a separate container mix  the reserved chicken stock and flour into a slurry.  Add to the chicken.  Finally, drop the dumpling dough balls into the pot and cover.  Allow to cook about 10 minutes.  The dumplings will float when they are done.



Spinach Artichoke Dip

Ingredients
  • 8 oz cream cheese
  • 16 oz sour cream
  • 8 Tbsp (one stick) unsalted butter
  • 1 1/2 Cups shredded Parmesan cheese
  • 14 oz quartered artichoke hearts drained and coarsely chopped
  • 4 oz can diced jalapenos
  • 10 oz frozen spinach thawed and drained
  • 2-3 cloves garlic pressed
Instructions
  1. In a medium pot melt together cream cheese, sour cream and Parmesan cheese.  Stir frequently and melt to an even consistency.  It should start to bubble
  2. Stir in artichoke hearts, drained jalapenos and spinach. Stir in the pressed garlic
  3. Serve with chips, crackers or toasted baguettes

Sweet and Spicy Glaze

Use with chicken, beef, pork or just about anything you can think of


Ingredients

  • 2 Tbsp honey
  • 1 Tbsp brown sugar
  • 2 Tbsp hot sauce ( I prefer Sambal Olek. Sriracha or any other hot sauce of your choice will do)
  • 1/4 Cup soy sauce
  • 2 Tbsp minced ginger
  • 4 Cloves minced garlic
  • Zest and juice of an orange or clementine
Mix it up and pour over your protein

Sweet Biscuits

Ingredients
  • 3 cups flour
  • 1 cup sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup butter
  • 2 tbs lemon juice
  • 1 tsp vanilla 
  • 3/4 cup milk
  • 1 egg
Instructions
  1. Cut butter into chunks
  2. In a food processor, combine the flour, sugar, baking powder and salt
  3. Cut in the butter until mixture resembles coarse meal
  4. Transfer to a large bowl and make a well in the center of the dry mix
  5. Mix together the lemon juice, vanilla, milk and egg
  6. Pour liquid mix into the well and mix only enough to form a dough ball
  7. Roll to 1 inch thickness and cut out biscuits with a 3 inch biscuit cutter and place on a parchment-lined baking sheet.
Bake at 375 degrees F for 20 minutes or until golden brown
